At Dello Mano, we've spent nearly two decades crafting handmade brownies in the heart of Queensland. But this story isn't just about ingredients or indulgence. It's about beginnings. Belief. And the beautiful Brisbane community that has grown with us since day one. Our brownie story is, quite literally, a brownie heart, a sweet, rich centre shaped by place, people, and purpose. Brisbane is more than where we do business. It's where our journey took root.

For Bien, co-founder of Dello Mano, Brisbane is home in the truest sense. His family emigrated here when he was young, building a new life in this sunny city. Years later, we returned to Brisbane together, seeking something more meaningful. Something handmade. Something ours.

We remember one of our very first outings here: the Millennial celebration at South Bank in 1999. The energy, the warmth, the optimism of a new century. Back then, Brisbane wasn't yet the food destination it has become. Even in suburbs close to the city, like Coorparoo, it was hard to find a good coffee. But to us, that made Brisbane the perfect place to start.

We weren’t following a trend. We were helping to create one, with every brownie heart we baked.

Brisbane is our canvas and our compass.

It's where Bien reconnected with his roots. Where our children grew up learning the rhythm of early market mornings. Where customers became family. Where a dream, to bring handmade food into the spotlight, quietly took hold and never let go.

We chose Brisbane not just because it was home, but because it was a city still writing its food story. A city that welcomed small beginnings. The warmth of this place, its people, its pace, gave us room to grow something beautiful. Our little brownie heart found room to flourish.

In 2006, we introduced Dello Mano at the Jan Powers Farmers Market. Our brownies were unlike anything on offer, rich, fudgy, individually wrapped, and elegantly packaged. A handmade luxury.  A slow food approach. And all of it from a small kitchen and two dreamers.

Each market Saturday, our little family woke at 2am. Our daughters, just 6 and 8, played "shop managers." Executives from Sydney and Melbourne, visiting Brisbane for the weekend, would insist on being served by the "managers," who would stride over, take orders, tally totals, and carefully pack each  gift box.

And then there were the Gold Coast women with headlamps. They arrived at 4:30 am, light beams cutting through the morning dark, just to buy our brownies. They brought our children gifts. They brought joy. They brought belief.

These weren’t just customers. They were the earliest bricks in what would become Dello Mano. They saw the heart in every brownie, even before we did.

The early days were hard. The food scene was still developing. But Brisbane embraced us. Slowly, consistently, lovingly. We moved from our first kitchen at the Taringa Soccer Club, to a small space at Breakfast Creek Wharf and later to our beloved Doggett Street store, where we planted Virginia creeper and were named one of Brisbane’s most beautiful cafes.

It was here that Dello Mano grew into a national brand. A global gift. Our first big interstate order? A full pallet for the Intercontinental Hotel Sydney. Our most meaningful award? The Lord Mayor’s Multicultural Business of the Year, recognising the spirit, tenacity, and cultural contribution of our Brisbane-born business.

Through it all, one thing stayed the same: every brownie we baked held our brownie heart, that centre of care, tradition, and taste.

Today, Dello Mano brownies are shipped Australia-wide and gifted across the world. But they are still handmade here in Brisbane, just as they were in 2006. Each brownie is baked in small batches, hand-poured and wrapped with care. It's all part of our belief that  handmade food is the new luxury™.

Of course, handmade food never disappeared, there were always people preserving tradition. But in the early 2000s, as mass production and convenience ruled, the resurgence of artisan values like provenance, care, and authenticity was reemerging as a real customer consideration. We saw it, believed in it, and leaned in, not just to create a product, but to build a brand around it

In the early 2000s, when the food scene in Brisbane was still growing, we staked everything on a belief: that small batch, beautifully wrapped, slow food could be luxury. That people didn’t just want convenience, they wanted connection.

Today, we’re proud to be part of a city that’s now known for its world-class food culture. We were one of many pioneers, but we’ll never forget how it started: just a brownie, a dream, and a Brisbane morning.  And always, our brownie hearts.
