Brisbane Beginnings: A Family and a Brownie

It started with a simple belief: that handmade food, made with care, by real people, was real food. In 2007, that belief came to life at a Brisbane market stall, where Dello Mano met its very first customers, offering freshly baked brownies to curious weekend shoppers.

Our story has always been rooted in handcraft and intention — a journey we explored in depth in How We Reimagined Brownies in Australia: A Founder’s Perspective. But what we didn’t expect was just how far that journey would take us.

One of our earliest global connections came from Singapore. A woman who’d discovered our brownies while travelling fell in love with them, not just as a treat, but as the centrepiece for her daily guest afternoon teas. She began placing regular orders: 20 boxes at a time, every month or so. Each request came in just after lunch the day before, and we would have them packed, cleared, and on a 7 pm flight bound for Singapore. By lunchtime the next day, they’d be at her front door.

It took careful planning, tight coordination, and not a little stress — she was, I would describe as, discerning. But we always made it. And it was worth it.

In time, we began sending more orders abroad — carefully packed, quickly dispatched. Our logistics evolved, our packaging strengthened, and our tracking became precise. Even today, we prefer to ship via air freight where possible — it costs more, but it protects the experience. And for something as small and meaningful as a gift, that feels right.

One Brisbane family once ordered a box to be hand-carried to a wedding in Africa. Another customer asked us to send brownies to her grandmother in rural New Zealand for her 90th birthday.

Over time, our brownies made their way into more formal channels, too. They were selected as in-flight gate lounge gifts for the launch of direct flights from Brisbane to both San Francisco and Chicago — shared with every passenger as a symbol of Queensland’s welcome. We’ve also had the privilege of supplying a large American international financial firm, sending our brownies as branded client gifts across the United States.
