As a food scientist by training, I knew how food systems worked. I had worked in the world of commercial food production. And I knew something most consumers don’t: to scale up food production for volume, you almost always have to change the recipe. You have to process it differently. You use different machinery. And with those changes, the food loses something. It loses its soul.
