We baked our first brownies in the old Brekky Creek bar kitchen — just one oven, one mixer, and the old beer taps still bolted to the bench. Our trays shared space with bottle openers. Our kids, still small, played cubby house under desks draped in sheets while the smell of Belgian chocolate drifted through the air.

Eighteen years later, we still stir by hand.

Not because we haven’t grown. Not because we haven’t evolved. But because the soul of what we do depends on human touch — the small adjustments, instincts, and care that only hands can provide.

Why We Still Stir by Hand — 18 Years On

Let’s be honest — our batches aren’t kitchen-bench sized anymore. In our commercial kitchen, we use large, traditional-style mixers reminiscent of European bakeries. But we’ve made a conscious decision to stay close to our roots.

Here's what that looks like every day:

  • We measure every ingredient by hand — no premade bases, no batching shortcuts.

  • We crack every egg ourselves — no liquid eggs or industrial pour-ins.

  • Each brownie tray is hand-filled and levelled by a real person.

  • We check the bake of every tray, ensuring consistency and quality — one by one.

Machines could speed this up. But they’d also strip out the judgement, the feel, the little choices we make in the moment. And we believe you can taste the difference.

Over the years, we’ve seen some local businesses explore automation — robot chefs, high-efficiency systems, ingredient pumps. For many, it’s a way to scale and keep costs manageable. But for us, it would mean changing the very food we set out to make. Our recipes weren’t designed for machines — and we’re not willing to redesign them for convenience. Our customers choose us for something different: food that holds onto its humanity. That care extends beyond brownies — even our cakes are handmade from scratch.
