Our Caramelised Macadamia Brownie Tart was born from a spark of curiosity in the Dello Mano kitchen: Could a brownie become a cake?
For over 18 years, we’ve been baking our signature Luxury Handmade Brownies, known for their deep chocolate flavour and fudgy texture. But this time, we wanted to explore how that richness could evolve, to become something new, something that bridges the gap between Handmade Cakes Brisbane and our beloved brownies.
The result is a dessert that feels both familiar and surprising, part brownie, part tart, part cake. It’s one of the many handmade stories behind our Cake Shop Brisbane, where each creation begins with a spark of curiosity.
The story of our Caramelised Macadamia Brownie Tart doesn’t begin in the kitchen, it begins in Paris.
Years ago, while wandering through E. Dehillerin, the city’s oldest and most beloved culinary store, once a favourite of Julia Child, I went searching for a square tart mould. I’ve always loved the geometry of squares; it’s why our Luxury Brownies come in beautifully boxed squares today.
There, tucked on a shelf, were the very moulds I had imagined, simple, elegant, and perfectly square. I bought all nine they had in stock and carried them back to Brisbane in my suitcase. Those same nine moulds are still used in our kitchen today, each one forming the base of every Caramelised Macadamia Brownie Tart we make.
When I returned home, I worked closely with our pastry chef to develop a dessert that honoured two of my great loves, real caramel and our signature brownie base. Together we created a tart that combines the depth of Belgian chocolate brownie with the golden crunch of honey-caramelised macadamias.
The result wasn’t quite a brownie, nor a classic cake, it became something entirely new: a handmade brownie tart, shaped by Parisian inspiration and Brisbane craftsmanship.

This recipe is a gentle nod to our Honey Macadamia Brownie, one of our earliest flavour creations, but now reimagined in a cake-like form.
