Dello Mano began with two people, two small children asleep nearby, and a belief in handmade food that ran deep. After a transformative trip to Italy, where we immersed ourselves in the Slow Food movement, we returned changed. I had worked in major food corporations where the focus seemingly was always on shaving cents and scaling fast. But in the hills of Italy, we saw something different: food made with reverence by real people, with real care.
That’s where the idea of Dello Mano was born.
To us, slow food means intent. It’s artistry. It’s the quiet discipline of creating something beautiful — not because it’s easy or fast, but because it’s worth it.
Even with our mixers and ovens, we’re not anti-technology. We’re pro-human.
What matters is that the creative spirit is never removed from the process.
Because that’s the line — when creativity disappears, something sacred is lost.

A foiling process may help with volume, but the process is still guided by hand and eye. Our brownies are touched by people who care — and that makes all the difference.
There’s something sacred about a kitchen in rhythm. Even on the busiest mornings, there’s a quiet energy — the calm of confident hands, the dance between stations, the unspoken coordination of a team who knows their tools.
Decorators, bakers, packers — all working as one.

Mornings often begin with the scent of melted chocolate. The ovens hum in the background, trays lined with baking paper await their turn. Someone weighs ingredients on the bench, while another checks the cooling racks for the perfect doneness. Even with deadlines approaching, there's an unspoken agreement: we don’t rush. We move with respect for the ingredients and each ther.
I don’t bake every day now. But I’m still deeply connected to creativity. I work with our team to develop new products, design packaging, and evolve the brand.
My days are full of strategy and making — and that creative fire still lights the way.

In the early days, we sold brownies at markets. Our daughters would help carry boxes and smile at customers. Sometimes we’d finish baking at midnight, sleep a few hours, and be up again at dawn. Those moments weren’t glamorous, but they were full of purpose. They laid the foundation for a business built on care, grit, and heart.
Our daughters grew up in this world, the late-night baking, the early market mornings, the travel to learn and taste.
Today, they’re just as passionate about creativity and slow food as we are.
They are fiercely intelligent (yes, proud mum talking!) and creative in their own right.
They’ve grown up seeing the reality of running a small business. They’ve seen the joy of loyal customers, the occasional heartbreak of lost parcels, and the resilience needed when a fridge fails or a courier is late. But more importantly, they’ve seen what it means to make something meaningful. And that — we hope — stays with them forever.
Slow Foodisn’t just a method now. It’s part of our family language.
Choosing slowness doesn’t mean choosing comfort.
Small business is no fairy tale. There are hard days, tight deadlines, budget decisions, and tough calls.
But there’s also joy in it.
In real kitchens. With real people.
Making something that matters.
For us, calm craft is both a business practice and a life value.

It’s in how we meet a team member’s eyes and say thank you after a long day.
