Wandering through Rome’s neighbourhood bakeries, the Market in Florence and Bologna’s bustling food markets, we saw how even simple things were treated with reverence. Bread was handed to customers with care, and cakes were wrapped like gifts.
The philosophy was clear: food wasn’t rushed; it was respected. That slow, thoughtful approach became the seed of Dello Mano. When we returned to Brisbane, we began baking at night in a borrowed soccer club kitchen while our young children slept nearby, slowly shaping the handmade path we still walk today.
